Pumpkin Spiced Pancakes

When fall rolls around it is time for comfort foods. Anything pumpkin and spices add amazing aroma’s to your home. Perhaps it’s just me but the colors outside during this time of year are a true work of art! When I was growing up this time of year was for digging up potatoes, we had so many we could feed and army, just one of the family times to work together.

When I think about what foods I rarely eat during the warm months, pancakes is one. Though a tasty treat, rarely do they stop the hunger pains throughout the day. And so I have to add some protein and or fruit to top off the meal. Also you can change things to your liking, meat of choice, corned beef hash even?

Pumpkin Spiced Pancakes

  • ½ cups milk
  • 1 cup pumpkin puree
  • 1 large egg
  • 2 Tbsp unsalted butter, melted plus more for frying
  • 2 cups all-purpose flour
  • ¼ cup brown sugar
  • 2 tsp baking powder
  • 1 tsp baking soda
  • 1 Tbsp pumpkin pie spice, cinnamon or nutmeg
  • ½ tsp salt
  • In a bowl, whisk together the milk, pumpkin puree, egg, and melted butter. In a separate bowl combine the flour, brown sugar, baking powder, baking soda, pumpkin pie spice, and salt.
  • Pour the flour mixture into the bowl with the wet ingredients and whisk until just combined. Add a little bit more milk if the batter is too thick.
  • Heat a lightly buttered wide heavy-bottomed pan over medium-high heat. I prefer to use an electric skillet. And then scoop ¼ – ⅓ cup of the batter into the pan or onto the griddle per pancake.
  • Flip when the bubbles that appear on the surface pop and form holes that stay open, and cook on the other side until nicely browned. Serve hot with pumpkin syrup.

Also with my pairing will be bacon cooked in the oven, on a backing rack so it doesn’t cook in the grease. And then to round it off some fresh blueberries on the side to cover the food groups.

Due to this being brunch for our Wine and Dine adding the final layer of beverage. My choice will be my very own label and vintage of Cabernet Franc, light and delicious by itself!
